Cookbook author Bittman (How to Cook Everything) offers this no-nonsense volume loaded with compelling information about how the food we eat is doing damage to the environment, what changes to make and why. Authors have covered this topic before (Michael Pollan, for example, in The Omnivores Dilemma and In Defense of Food), but Bittman takes a practical turn by concluding with 77 recipes that make earth-friendly eating doable and appealing. His collection of reliable recipes even includes such meat dishes as Thai beef salad, which isnt meat-heavy, but rather has just the right balance of meat to greens. There are also such staples as super-simple mixed rice; chicken not pie; and modern bouillabaisse. Bittman decries consumption of over-refined carbohydrates, but doesnt leave off without some sweets, including chocolate semolina pudding and nutty oatmeal cookies—suggesting, as the whole book does, that a diet in synch with the needs of the earth doesnt result in a sense of utter deprivation. Exciting

This little book has given us an easier path to healthy eating: more vegetables, whole grains and legumes-- less meat. It also introduced us to some unusual flavor combinations. It is fun to use these recipes because the author offers so many variations. If you don't have one ingredient, you can surely find another that will go nicely in your own larder... no "cut and dried, this is the way it must be down to a pinch of this or that. " This book is for experienced cooks and neophytes. There was more commentary than recipes, but it all fit together, and both my husband and I have used the recipes for successful/delicious dishes. We intend to buy all his cookbooks now!

Lackluster

I love Bittman. Unfortunately, this was not his best work. Much of Bittman's essay on food, the environment, and health has already been said by others (e.g., Michael Pollan). Even more disappointing, though, was the lack of groundbreaking recipes (save a precious few). I dog-earned just as many recipes in Food Matters (approximately ten) as I usually do in my monthly Martha Stewart Everyday Food (again, approximately ten)--and one month of Everyday Food costs a LOT less.

Good book, but I don't recommend the Kindle version

For those of you considering buying this on your kindle, you should know that there is no index to the recipes (no index at all, for that matter). I have had to bookmark each recipe that interested me. Even had to bookmark the table of contents as it wasn't pre-marked as it should have been. Also, there are sentences that apparently appeared in a sidebar of the printed version that just randomly appear mixed in the text with no font variation to distinguish them. And there is a "table" that is strung out over multiple pages not looking anything like a table or chart at all. It is probably worth the extra $$ for the print version.
As for the book itself, it wasn't new information to me, but was well presented and entertaining to read. I am delighted that a well-known food writer like Bittman is trying to get Americans to eat a more wholesome and ecological diet. I have only tried one recipe so far, and thought it was quite tasty.
